
Let me tell you something about salsa and I, well we’ve had a long and satisfying relationship. The spicier the better! I love it on eggs, burritos, chicken, salads, etc. I don’t care if I’m devouring salsa and my nose is trying to run or my eyes water, it’s all delicious to me. Anyhoo I present to you a easy and superb salsa recipe that you can whip up in no time. Plus it tastes a million times better than store bought salsa.
HOMEMADE SALSA (Courtesy of Lori J)
1 can (28 ounces) Whole tomatoes with juice
2 cans (10 ounces) Rotel tomatoes and green chilies or generic store brand
1/4 Onion
1-2 Cloves of garlic, minced
1-2 Jalapenos, sliced (make it as spicy or mild as you like)
1/4 tsp Pepper
1/4 tsp Salt
1/4 tsp Sugar
1/4 tsp Ground Cumin
1/2 cup Cilantro
Juice from 1 lime
Rough cut the garlic, onion, cilantro and jalapeno.
Put jalapeno, onion, cilantro, garlic, salt, pepper, cumin, sugar, and lime juice into a blender or food processor. Pulse 4-5 times. Add the tomatoes and Rotel tomatoes. Pulse until salsa is the consistency you like. Allow flavors to blend together at least an hour. Check seasoning.
I love making my salsa more spicy so I’ll use 2 jalapenos sometimes but that’s too hot for my mother so while I’m under the parent’s roof for this temporary stay I make it milder for her. Please be sure to season to your taste and I’d love to hear how your recipes turn out!
